Chef Brian Doi, who created the first Parallax menus on Mammoth Mountain and recently has been sous chef at Restaurant LuLu in the Village, has been named chef at Alpenrose, according to the restaurant.
A graduate of the Southern California School of Culinary Arts in Pasadena, Doi spent four years in Hawaii exploring the artful styles of the Asian-Pacific. In Honolulu, he worked with critically acclaimed Alan Wong, the leader in French and Asian fusion cooking, and at the Kahala Mandarin Oriental Hotel's Hokus Restaurant, part of a AAA Five Diamond property.
"Chef Doi brings a new twist to steaks and fish and his showcasing of grill fare influenced by an Asian Pacific style has blown me away," said restaurant owner Tony Rojas. "He's a welcome addition."
Open nightly for dinner from 5:30 p.m. and Sunday Brunch from 9:00 o'clock, the Alpenrose is situated at 343 Old Mammoth Road.
